Green coffee bean is an evergreen shrub or small tree in the rubiaceae family. Chlorogenic acid in green coffee bean extract is a phenylpropanoid compound produced by shikimic acid pathway in the aerobic respiration process of plants, also known as coffee tannic acid, which is composed of a variety of isomers.Chlorogenic acid soluble in water, ethanol, acetone, slightly soluble in ethyl acetate, room temperature was pale yellow solid.
