Product Description

 

What is beer?

Beer is a beverage which is made primarily from malted barley (starches are converted to sugar by the enzyme amylase) which has undergone alcoholic fermentation by use of beer yeast.

Historical records of beer production go back as far as documents discovered from the Mesopotamian Civilization of 4000 B.C. in which beer was being brewed by the Sumerian people of the time.

Beer Varieties

Top-Fermenting Beer This refers to beer fermented at a relatively high temperature (approximately 20 degrees Celsius). The method gets its name from the fact that yeast tends to rise to the top of the tanks during fermentation. Top-fermenting beer includes ales, stouts, porters, weizens, and others.
Bottom-Fermenting Beer This refers to beer fermented at lower temperatures (around 5 degrees Celsius) and gets its name from the fact that the yeast tends to settle at the bottom of the tanks near the end of fermentation. These beers are usually best drunk cold. They include pilsners, schwarzbiers (black beer), and others.
Naturally Fermented Beer This refers to beer which is fermented at around 20 degrees Celsius without the direct implementation of yeast. Fermentation occurs naturally due to interaction with microbes in the air. These beers are best drunk at around 10–15 degrees Celsius. They include lambics and other varieties.

 

Beer in Japan

(A) Beverage made from malt, hops, and water which has undergone fermentation (with an alcohol content of less than 20%).

(B) Beverage made from malt, hops, water, as well as wheat or other ingredients specified by government ordinance (with an alcohol content of less than 20%).

However, the weight of the other ingredients specified by government ordinance must not exceed five-tenths of the total weight of the malt used.

Beer first entered Japan on ships from Britain and the United States. In Meiji year 3 (1870–1871), the American brewer Copeland opened the "Spring Valley Brewery" in the foreign settlement in Yamate, Yokohama and brewed beer to sell mainly to the foreign residents there.

 

Classification of Beer in Japan

Beer:

Beverages in which malt makes up two-thirds of the total ingredients.

 

Happoshu:

Beverages in which ingredients other than malt make up more than one-third of the total ingredients.

 

New Classification:

1. Other fermented beverages (effervescent) made with sugars, hops, and water, as well as soy, green peas, corn, and other ingredients.

2. Liqueur (effervescent) made by adding spirits to Happoshu which has been brewed with less than 50% malt and with a total extract content of 2% or more.

 

Japanese Beer Terms

Lager Beer

Beer aged through a storage process.

This term refers to all beers aged in this way regardless of whether or not they undergo pasteurization.

"Nama Beer" or Draft Beer Beer which has not undergone pasteurization.
"Kuro Beer" or Black Beer Darkly colored beers which receive their coloring from the use of darker colored malts in the brewing process.
Stout Made with darkly colored malts, this dark beer has a distinctly strong aroma and flavor.
