We produce Balsamic Vinegar of Modena, strictly PGI or PDO certified products, including Organic Balsamic Vinegars certified by ICEA. Our vinegars are only made with cooked grape must (no industrially concentrated must) and wine vinegar, with no added caramel, no flavourings, and no preservatives.
Our ancestor Francesco Aggazzotti authored the first written documentation on the techniques for processing the must and for decanting the vinegar as well as on the aging phases of traditional balsamic vinegar of Modena.
