Organic Heather Honey This raw heather honey, which we obtain through cold extraction, is from virgin land in the Galician mountains far from busy roads and all types of conventional farming within a radius of at least 3 km.
It is a dark amber-coloured organic heather honey with reddish tones and lingering floral and vegetal aromas. The aroma is of medium persistence and intensity. Semi-sweet taste with a bitter aftertaste.

We are a family company our ancestors have been producing honey since 1800, we are currently a team of 22 people and our beehives are located in apiaries which are difficult to access, away from conventional agricultura in a unique location the Eastern mountains of Galicia.
Our organic honey and bee pollen recollected in our beehives situated in the landscapes of the natural mountains of Ancaresand Caurel, in the east of Galicia, are the main natural area of Galicia. In the green reserve you can find oaks, chestnuts and beech.
Our beehives are located in the pristine locations with hard access and more tan 700 meters higher, far away from the conventional agriculture.Toca´smission is offer a high quality product that helps to stimulate and preserve the environment in the natural reserves of Galicia, through sustainable beekeeping activity.
The honey and pollen comply strictly with the requirements from the European Regulation in Organic Farming. We also work under the Protected Geographical Indication “Honey from Galicia”
All the honeys from TOCA are only from our beehives based in the province of Lugo, east of Galicia.
Our Company is registered under the “Protected Geographical Indication: Honey from Galicia”, which regulates the Quality specifications from our products.
The requirements from our geographical indication are more restrictive than the current European legislation for the quality standards of the honey.
Honey from Galicia, physic-chemical characteristics:
• Moisture ≤ 18,5%. The water content in the honey is one of the quality indicator that determine the possibility of the honey to remain fresh and avoid spoilage by fermentation.
• Diastase activity ≥ 9 Ghote/Schade scale. The diastase facilitate conversion of starch to maltose, that is add by the bees during honey process. Although natural levels change in the honey depending on floral source, the reduction of diastase in relation to what should be is a quality indicator.
• HMF (Hydroxymethylfurfural): ≤ 28 mg/Kg. In the hive, the honey normally be below 1mg/kg but the level soon start to rise with ambient temperature above 20ºC. It is common for HMF to be below 10mg/kg in fresh extracted honey. Levels higher tan this indicate excessive heat during the extraction process. The international standards of Quality requires that the HMF found in honey does not exceed 40 mg / Kg.
