[Advantages of -60℃]
Freshly caught tuna is quickly frozen at -50℃ to -60℃. When food is frozen, the frozen cells expands the moisture and destroys the surrounding cells. This causes the umami flavor to be lost.
A faster freezing speed minimizes this loss of quality. This is because the temperature range from -5℃ to -1℃ is when the food becomes solid and the crystal growth is most promoted.
By reducing the time when the food is in this temperature range, cell destruction can be minimized.
This retains the freshness and flavor without losing the quality.
