SPAGHETTI WITH WHEAT GERM
Wheat germ is the heart of the wheat grain, rich in flavor and nourishing active ingredients.
Normally during the grinding of the grain the germ is removed to facilitate the conservation of the flour but for this artisan pasta techniques are used that restore it in the flour, because it is processed immediately, when still fresh.
During cooking, an intense aroma of wheat is released and the water is slightly tinged with green due to the presence of fresh wheat germ.
