Alkaline agent: leavening agent.
It is often formulated with ammonium bicarbonate as a leavening agent for biscuits and cakes.
The addition amount in wheat flour is 20g./kg. It can be used with citrinic acid, tartaric acid, etc. to prepare a foaming agent for solid refreshing drinks (to produce CO2). Because it is a harmless weak alkaline agent, adding about 0.1% to 0.2% when washing vegetables can make the green stable. When used alone, it is strongly alkaline due to thermal decomposition. It will turn yellow when used in bread and destroy the vitamins in wheat. It is best to be used in combination with acidic substances such as calcium hydrogen phosphate. It can still be used for food blanching and removing astringency.
