At a low temperature, tencha is then slowly stone ground into an emerald green fine powder, and that is what being called “Matcha”.The average particle size of Matcha is only 3 micrometers. This ultramicro powder can be quickly dissolved in hot water with no precipitation. Due to its brilliant green liquor color, mellow tast, and long-tasting fragrance, Matcha is named as the
“Jade of tea”.
Matcha is made from Tencha, which is produced with fresh tea leaves plucked from shad-grown plantations in early spring. After steam fixations and rapid heat drying, the fresh leaves turn into the hing-chlorophyll-content green tea, know as “Tencha”.
