Nata de coco is a food of the Philippines origin, made from coconut water after fermentation due to the effect of Acetobacter xylinum. Therefore, although it is called jelly, coconut jelly does not use jelly to create flexibility.
Nata de coco is often used as a dessert and may accompany various types of drinks, ice cream, pudding, and cocktails.
