Quality does not only depend on origin but also on the type of the bean and its moisture content. During the sun and shadow drying phases, each bean will not progress in the same way. Some will be dryer than others. It is after sorting and maturing phases, the final quality of the madagascar vanilla bean will be defined in three major categories.

BLACK

Black vanilla is easily recognizable from others. The moisture makes the bean supple and fleshy..

 

This is the one used by Chefs. Supple and fleshy, it is simple to split. The coat is fully black, chocolate colour, without any colour variation.

 

They are products which request a high expertise and caring. If they are too humid, they are more sensitive to mold and fermentation.

 

Black vanilla has a moisture content between 30 and 35%. The Gourmet grade is from 15cm and +.

 

TK

TK vanilla is black, drier due to less moisture content, chocolate colour and can have few red filaments.

It can be used for gourmet meals, fine dining or for other uses.

 

Those beans are appreciated by packagers, less humid and lighter, they have the advantage to be more numerous per kilo.

 

T4 or TK vanilla has a moisture content between 26 and 30%.

 

RED

Red vanilla or extraction vanilla is used by industrials who will extract and transform it in extracts or natural aroma.

On the contrary to Gourmet market ( black vanilla ), industrials usually look for a dryer product.

 

We have to distinguish two types for red vanilla:

 

The European red with a moisture content between 23 to 26%. It is recognizable thanks to some red filaments on the bean and to a reddish colour.

 

The American red looks for a drier quality and inferior moisture content, between 20 to 24%. Their colour is red woody.

 

OTHERS

Short

They are vanilla in mixed qualities (TK, Red) and size between 13 cm and 10 cm.

Cuts

This quality is defined by short vanilla beans ( < 10 cm ), and broken beans.

 

The cuts are used in extraction and food industry. Their moisture content is around 15% to 21%.

 

Powder

Sugar free, alcohol free, vanilla powder color is brown. Dry and no additive product, it's 100% natural vanilla.
