It melts quickly as temperature rises, and completely melts at 35°C. Therefore, it is a kind of grease characterized byhardness and fast dissolution.
Cocoa butter should be stored in a dry, clean, and well-ventilated room, without any foreign smell, at a temperature of 18 ° C ± 5 ° C and a relative humidity of 75 %.
