Take fresh and clean pineapple peel, thorn, core and other leftovers with juice yield of more than 45%, press, extract juice and filter the fruit crumbs. The filtrate was adsorbed with 0.025-0.05% benzoic acid and 5% kaolin. After adjusting the pH of kaolin adsorbent with saturated sodium carbonate solution to 6.7-7.0, adding 5% sodium chloride, stirring and filtering. The filtrate was treated with hydrochloric acid to adjust pH 4.8-5.1, ammonium sulfate was added, and then precipitated and dried under vacuum, that is, bromelain. For pineapple scrap, the yield is 0.054-0.103%.
