A tagine, sometimes spelled “tajine” is a traditional Moroccan cooking vessel made of a clay combinaison with a round base and low sides. A cone-shaped cover sits on the base during cooking. The conical lid traps steam during cooking and returns the liquid to the clay pot, resulting in a moist dish with concentrated flavors.
Tagine is closely associated with Moroccan cuisine, where slow-cooked savory stews made with meat, poultry, or fish, are cooked with vegetables, aromatic spices, dried fruit, and nuts.
Tagines are easy to use to produce delicious, healthy meals. The shape of the lid naturally circulates the heat and a small hole at the stop releases any extra pressure. Since it is made from natural materials, it is healthier to use than teflon-coated pans.

Note :
The first thing you should do after you bring your tagine home is let it soak it in water overnight. This will help increase the
shelf-life of your tagine.
Allow the tagine to cool before washing with cold water and avoid drastic changes in temperature to prolong the life of your
tagine.
