How coffee is made in our roasting ...
The coffee secret is the roasting process . In our roasting plant in Limite sull'Arno, a stone's throw from Florence, there has
been a real processing rule for 70 years: green coffee is roasted under visual control by Angelo, father of Angela and Silvia, the two owners . It is he who examines the last minutes of the coffee roasting. During roasting, the rotating drum of the roasting machine takes a sample of beans and, in a few seconds, the roaster evaluates the degree of roasting and decidesobserving the brown color and the nuance of the coffee beans. Carrying out this operation at the right time during roasting is essential to ensure that the roasting process takes place in the right way and that the aroma and type of coffee are what we like.
