Pecorino di Pienza 24 months
The Pecorino Gran Riserva is the essence of the ancient Tuscan agricultural traditions. The big cheese wheels, destined to age for 24 months, were produced during the spring time, when milk was abundant and they were stored by the farmers’ families for winter times. Today Pecorino Gran Riserva is still produced during March, April and May, because the raw milk is rich in flavours and taste. The thick rind is yellow, the paste is compact but soft, the complex and strong aroma is an introduction to a harmonious and persistent taste. It can be paired with fresh fruit as figs, peers, raisin or with dried fruits as almonds and walnuts. It is
perfect with full body wines as Brunello di Montalcino or Vino Nobile di Montepulciano.

Company Profile
Fattoria Buca Nuova is located in the very heart of the beautiful UNESCO site of Vald'Orcia and we are near the most important cities of Southern Tuscany: Pienza, Montepulciano and Siena.
We take our cheese only from local sheperds and, after the process of pasteurization, we transform it in wheels.
After production, we leave our cheese ageing inside refrigerators. We produce a wide range of cheeses, from fresh to long maturation ones.
When cheese reaches the right maturation, we sell it on the market.
This is perfect alone or paired with some of our typical products.
Production process
CHEESE PRODUCTION
We take our cheese only from local sheperds and, after the process of pasteurization, we transform it in wheels.
CHEESE MATURATION
After production, we leave our cheese ageing inside refrigerators. We produce a wide range of cheeses, from fresh to long maturation ones.

When cheese reaches the right maturation, we sell it on the market.
