It is a fat-soluble vitamin and one of the most important antioxidants.Soluble in fat and ethanol and other organic solvents, insoluble in water, stable to heat and acid, unstable to alkali, sensitive to oxygen, not sensitive to heat, but the activity of vitamin E significantly decreased when frying.The phenolic hydroxyl group on the vitamin E benzene ring is acetylated, and the ester hydrolyzes into phenolic hydroxyl group and becomes tocopherol.
Use of Vitamin E: Nutritional Additives; Antioxidants. Used as an antioxidant in oils, butters or foods using such oils. Sealed packing can be replaced by nitrogen. The products are suitable for freeze-dried vegetable processing (0.1-0.3%), freeze-dried meat products (0.2-0.5%), salted fish products processing (0.05-0.1%), instant noodle products processing (0.05-0.1%) and other industries.
