This bottled fruit jelly is made with Shimizu white peaches, the finest variety of white peaches cultivated in Okayama Prefecture.
Of the many varieties of peaches grown in Japan, white peaches are grown only in Okayama Prefecture. While the fruits are still small, each one is carefully bagged by hand to block the sunlight so that the peaches grow to have a beautiful white color. Due to this time-intensive process and the delicate white skin that is easily damaged, they are rare and costly, selling for 1,500 to 2,000 yen each in fruit gift sets in Japan.
Among them, Shimizu white peaches are said to be the finest variety, with an elegant fragrance and delicate, tender flesh.
The harvesting period is short, and they are only in season for about 10 days from late July to early August.
