〇 What is Iwakuni Lotus Root? 〇
This lotus root features a crispy texture and a starchy stickiness firm enough to stretch when bitten.
The main component is carbohydrates. This light-colored vegetable contains plentiful dietary fiber and polyphenol. It is rich in vitamin C, vitamin B6, vitamin B12, iron, potassium, copper, zinc, tannins, lectin, and other vitamins and minerals. It contains vitamin C in amount similar to lemons.
A lotus root cross-section normally has eight holes. This root has nine holes, however, and is said to have become a local specialty product for the cross-section's similarity to the family crest of a lord in the area around Iwakuni, Yamaguchi Prefecture, in the Chugoku region.
The vitamin C from lotus root, as rich a source of the vitamin as are lemons, gains resistance to heating from its coating of lotus root starch.
Vitamin C has a strong antioxidant effect, and is thought to improve powers of immunity.
The tannins contained in vitamin C also exhibits antioxidant properties, as well as an effect in constricting blood vessels and suppressing inflammation.
In Japan, lotus root is familiar as a food material for relieving the symptoms of allergic rhinitis (pollenosis).
