LEM（Lentinula edodes mycelia-growing medium)
Manufactured under stringent sanitary and quality control conditions by a GMP-certified factory. The raw materials (sugarcane fiber and rice bran) undergo quality checks to detect any pesticides and heavy metals before being used as a culture medium. The mycelia of shiitake were inoculated into this medium and cultured for four months. During this time, the continuous reaction of multiple kinds of enzymes produced by the shiitake mycelia causes the culture medium components to be decomposed and denatured. Moreover,the mycelia also digest itself (patented process). These reactims produce the bioactive components, polysaccharides consisting of mainly pantose and water-soluble lignins. LEM is fermented food containing valuable ingredients difficult to obtain from regular food and mushroom products.
