Catarratto is the variety of white grape most present in Sicily and as a good native vine it expresses the territory well. The
harvest is carried out at the beginning of maturation and the vinification is carried out to maintain its light straw color, the
characteristic floral and fruity notes and its exceptional freshness. These peculiarities make it perfect for sparkling wine.
Harvest period: last ten days of August Vinification system: cryomaceration for 5 hours Soft pressing Vinification and aging in
stainless steel silos, with inoculation of indigenous Sicilian yeasts and at a controlled temperature for 3 months Refermentation
in the tank for 45 days (Italian method)
