AccozymesTM Lipase is a kind of high efficiency enzyme obtained from submerged fermentation of Aspergillus Niger by series of scientific methods. It can be widely used in food, leather, detergent and biological energy source, etc.
Lipase is a kind of serine hydrolyses which can catalyze hydrolysis fatty glyceride generate Glycerinum and fatty acid. The important character of hydrolysis reaction is proceeded in oil-water interface. Lipase can also catalyze the synthesis of ester and ester exchange reaction.

Definition of Activity: 1g solid enzyme (or 1mL liquid enzyme), under specific temperature and pH level, when put through the process of zymolyte hydrolysis for 1 min will produce 1 μmol of titratable fatty acid. This is defined as 1 unit of enzyme activity and is shown as u/g (u/mL).
Working Temperature: 30℃-70℃ (Effective), 55℃-65℃ (Optimum).
Working pH: 2.5-11.0 (Effective), 3.3-4.0 (Optimum).
Ca2+ and Mg2+ have increasing effect on enzyme activity; Zn2+, Fe2+ and Hg2+have inhibiting effect on enzyme activity. Cu2+ and EDTA has less effect on enzyme activity.
