Chili peppers are the largest spice crop in the world. In each tropical region, there're hundreds of different peppers; and about 1/4 of the world's population eats chili peppers, which have different colors, shapes, and sizes. Chili peppers can be as tiny as a young pea or as long as 30 cm. There are also so many flavors ranging from mild, strong, and sharp, to unpleasantly spicy.
Generally speaking, all the fresh chili peppers have a glossy and smooth skin with firm texture; in the period before and after its fruit turns colors, the spice tastes the most powerful.
