We are a family winery and we are located in San Pietro di Feletto, in the heart of the Conegliano Valdobbiadene Prosecco Superiore DOCG production area. The owner family is the Ceschin family: Fabio Ceschin founded Il Colle in 1978, just after graduating at the Conegliano wine school. Today at the helm of the business are his wife Gianna and their sons and daughter: Francesco, Andrea & Sara. Andrea is the general manager; Sara is the sales and marketing director; Francesco takes care of the vineyards. Gianna, the mother, directs the accountability department. We have always believed in the potential of the Glera grape and refined the sparkling wine making techniques over the years, investing our resources into the production of Prosecco Superiore. We love the tradition and for this reason we also produce some other different wines from the area: niche products like Colli di Conegliano Rosso DOCG, Conegliano Valdobbiadene Prosecco DOCG Tranquillo and Colli di Conegliano Refrontolo Passito DOCG. Fabio's idea of wine is the idea that the family and the whole team are pursuing today: to produce an healthy and genuine wine. A wine that you drink and you taste the authentic style of Prosecco, the authentic aromas of the grape. We manage and have direct control over all the phases of the production chain, starting from the vineyards. Part of the grapes come from our vineyards or vineyards that we manage directly: totally 40 hectares. The other part of the grapes comes from small producers: local vine growers who have been collaborating with us for over 40 years. We harvest only by hand: both because of the characteristics of the hilly area and to start a careful selection of the grape. We select only the best grapes, avoiding the rotten ones. This is one of the things that allow us to reduce oenological treatments during the winemaking. We have state-of-the-art equipment and invest a lot of resources in internal research. In particular, we focus on techniques to reduce the use of oenological treatments, especially sulphites. For example, our team of oenologists has developed the exclusive Il Colle Method: the must becomes sparkling wine in only one, single step, directly in the autoclave. With this method we do not add sulphites during the winemaking. We add a small percentage just before the bottling. Il Colle Method allows us to preserve all the organoleptic and aromatic characteristics of the wine and to produce a genuine wine.
