Tapioca starch is widely used in food formula such as baked products, also applied in the squeezed snacks and cassava grains of bead. Modified starch and starch derivatives have been used as thickener, binder, bulking agent and stabilizer. It’s also the best incremental agent, sweeteners, flavor agent carrier and fat substitutes. Food using tapioca starch including canned food, frozen food, dried food, baked food, leisure food, seasoning, soup seasoning, sausage, dairy, meat and fish products, baby foods.
Drinks
Modified starch is used as colloid stabilizer in the drinks containing solid ingredients. It is better than sucrose, because it improves the processing procedure and strengthens the product features, it can fully meet customers’ demands with other sweeteners. Cassava starch hydrolysis form the high degree hydrolysis syrup, which is a good source for brewing.
Candy
Cassava starch and modified starch has many uses in candy production, such as gelation, thickening, stable system, enhanced foaming, control crystallization, bind, film foaming, add luster, etc. Low viscocious cassava starch is used in gelatin candy, such as jelly and gums. Acidolysis starch is the most commonly used for it has excellent reversing&gelling ability. The dry starch was used as candy mold release agent. Starch based glycan is basic material for making sugarless gums.
