Technologically it requires shock cooling at temperature from 2 till 4 Celsius degrees in a short cooling tunnel. We have chosen the form of drops (coins) for our confectionery compound, since this form is most convenient for confectioners and chocolatiers. It allows correctly dose confectionery compound, does not require additional preparation before melting.
Ingredients: Sugar, lauric cocoa butter substitute, dry milk products (whole milk caramelized powder, fat free milk powder), cocoa powder, emulsifier (soy lecithin), natural vanilla flavor. Shelf life: 18 months. Consistency: 16-18C - solid, at 40-45C - flowing. Packaging: drops (coins) 0,5kg*18/Carton; drops (coins) 2,5kg*4/Carton; drops (coins) in bags 10kg.
