Amazake made with 100% of Haruru, an original brand of rice from Choshu, Yamaguchi Prefecture, through trial and error. After a lot of work, we were able to complete the project.
Haruru" is a cross between Koshihikari and Yamahoshi, and is suitable for cultivation in mountainous areas. It has the delicious taste of Koshihikari and the glossy luster of Yamahoshi.
We are a miso maker, and the koji made in our shop has a strong power to decompose the protein. The amazake made from the koji is characterized by its strong umami taste.
It tastes easy to drink. It has a sharp sweetness when it is cooled and a sweetness when it is warmed. Enjoy chilled Amazake in summer and hot in winter!
Our company is a miso manufacturer and we produce and sell miso in Yamaguchi prefecture.
The most common kind of miso in Yamaguchi prefecture is miso made using barley. "Barley miso" is a rare kind of miso in Japan that accounts for only 5% of all miso produced nationwide.
Barley miso is unique for having a slightly sweeter taste than regular rice miso.
Although we do not disclose the production region in the interest of avoiding potential risks in the event of a disaster, the barley miso produced by our company is all made using barley and naked barley cultivated in Yamaguchi prefecture as our top-choice ingredients.
We use 100% Japanese products, mainly from Yamaguchi Prefecture.
