These are chef's knives. The product name is SAIUN Gyuto Knife. They are available in two sizes: 200 mm and 230 mm.
Our gyuto knives are composed of materials carefully selected. The core is VG10, which is a high carbon stainless steel containing covalt and contributes to its sharpness and long-lasting cutting performance, and the outside is damascus steel, which increases durability and sharpness, not to mention its beautiful appearance.
The damascus blade is given its sharpness by wet grinding. It is a vital process to give it a smooth shape to cut with less pressure and to determine its sharpness. And a special heat treatment called "Sub-zero process" enhances toughness and hardness of the blade using a machine that cools it less than minus 70 degrees Celsius.
And the handle is elaborately designed to grip easily and micarta adds it to both functional merits like water proof, fire proof, and keeping its shape and beautiful appearance that gives an impression of "Japanaese modern." A seamless integrated structure keeps the gyuto clean.
