Tea Description |
Longjing tea, also known as Long Jing Tea, Xihu Longjing, Dragon Well Green Tea, Long Chung, Lung Jeng Cha, is a variety of pan-roasted/Chao Qing/Stir-fry green tea from the area of Longjing Village in Hangzhou, Zhejiang Province, China. Green tea is processed using four different methods, and divided into four categories based on these methods. These categories are stir-fried, bake-dried, steamed, and sun-dried teas. But Long jing tea is the strongest category of green tea. It is produced mostly by hand in early spring with one Bud and one or two leaves, it’s renowned for its high quality, earning it the China Famous Tea title.
Like most other Chinese green tea, Longjing tea leaves are roasted early in processing (after picking) to stop the natural oxidation process, which is a part of creating black and oolong teas. The actions of these enzymes are stopped by "firing" (heating in pans) or by steaming the leaves before they completely dry out. As is the case with other green teas (and white teas), Longjing tea leaves experience minimal oxidation. When steeped, the tea produces a yellow-green color. The tea contains vitamin C, amino acids, and, like most finer Chinese green teas, has one of the highest concentrations of catechins among teas.
Cultivar adds another layer of complexity to pricing except processing skills and ingredients. There are nearly two dozen of micro-varieties in Zhejiang province alone. The Old Tree (Qunti) and No.43 are the most revered and priciest, with pronounced aromas and tastes. Wuniuzao, also called the Early Longjing, is one of the earliest harvests and possesses a comparatively light and subtle taste. Even the well-trained eyes cannot distinguish all the varieties and sources sometimes. However, you should be able to discern some differences by comparing the appearance, scent and liquor of different varieties side by side.
Our Long Jing Dragon Well is a truly sublime tea, made from Longjing 43 cultivar from the center tea producing area, which of limited yield annuly. Its liquor is a lovely golden jade hue and has a pure clean roasted nuts aroma, with gently floral notes, weighty tannins and sweet aftertaste. Long Jing Dragon Well tea has a one of a kind, distinguished appearance; it has a flat, large leaf shape that tea lovers will recognize instantly upon sight. Its leaves are broad and flat, a result of laborious harvesting, handling, and drying. Long Jing Dragon Well tea is refreshingly smooth, silky, sweet and delicate, so worthy the delicate labor-work, no wonder it always listed among the very best of Chinese greens for centuries! |
