Dairy products


Gum Arabic is added to milk and milk products to produce the desired dish or beverage. This includes appli-cations where Gum Arabic is used to suspend the ingredients and impart richness and body to the drink. In this field Gum Arabic is used as an excellent binder of water and as stabilizer. It is applied in the produc-tion of ice cream, liquid milk products, sherbets and other products. The addition of Gum Arabic prevents the formation of ice crystals by combining with large quantities of water. The proper amount of milk or cream is mixed with Gum Arabic, then the mixture is heated mildly, poured into molds, cooled and packed.

Confectionery products

Gum Arabic functions in confections as an emulsifier, sugar crystallization control agent, bulking agent, and film former. In
caramels and toffee products, Gum Arabic is emulsification properties aid in the reduction of fat droplet size distribution thus providing stability to the product. It is the recognized preferred natural ingredient for the production of high quality and reduced calories soft candies. Bakery products

Even small quantities of Gum Arabic added to the dough increase the yield, give greater resiliency, improve texture and give longer shelf life. When used in a bun glaze, Gum Arabic imparts stability in conjugation with free-flowing and adhesive
characteristics. The glaze is applied while still warm and adheres firmly to the bun upon cooling.

Fruit juices and Beverages
Gum Arabic is widely used to stabilize emulsions, add dietary fiber, suspend solids and largely responsible for the lace curtain effect on the sides of beer glasses. Eye-appearance opacity in beverages and beverage dry mixes are produced by spray-dried combination of vegetable oil and Gum Arabic sold commercially as a clouding agent.

Nutritional products
Gum Arabic is a low calorie food and cholesterol reducer. Many weight loss products also require the use of stabilizer to increase
bulk in the stomach through swelling of the food. Gum has a great deal of experience in weight loss and weight control products.
It has been used for more than 3000 year and is generally regarded as safe (no ADI value given).

Culinary products
Gum Arabic is a very effective water-binding agent. Its primary emulsification properties are particularly effective in standard and low oil pourable products. The surface active properties of the gum emulsify and stabi-lize the oil droplets and provide a creamy mouthfeel.

Processed Fruits and Vegetables
Gum Arabic is used to preserve fruits and vegetables. All dried fruits, root and tubers, legumes and packaged seeds are likely to have Gum Arabic added to them. Canned vegetables might contain Gum Arabic as well. Spreads, pureed fruits and vegetables, vegetable sauces, candied fruit, canned vegetable juice and other processed products that contain fruits and vegetables are often prepared with Gum Arabic to ensure that the ingredients will last longer.

Processed Meats
Any meats that have been processed or have ingredients such as flavorings added to them are likely to contain Gum Arabic. This includes hot dogs, sausages, luncheon meats and canned fish. Any preserved meat or fish, as well as dried egg products and meaty soups and sauces also contain Gum Arabic. Products made with soybeans, such as tofu and soymilk, usually don't contain Gum Arabic. However, soy-based seasonings, such as soy sauce, are likely to use Gum Arabic as a preservative.

Flavor encapsulation
The flavor industry uses Gum Arabic as a fixative in spray drying applica-tions where the gum encapsulates the flavor compound, protecting it from oxidation and volatilization.When used as a fixation, Gum Arabic forms a thin film around the flavor particle, protecting it from oxidation, evaporation, and absorption of moisture from the air. This is advantageous when hygroscopic materials become spray dried. Flavors spray dried with protective colloids last 10-20 times longer than the same flavor air dried on a solid. Gum Arabic is reacted with gelatin in a medium containing the flavor to form an insoluble, protective film surrounding or encapsulating the sphere of flavor. In the flavor industry, Gum Arabic is used for two primary applications. These are as a stabilizer for the concentrate used for soft drink manufacture (oil in water emulsion) and as a protective carrier for spray drying liposoluble and sensitive products.

Gum Arabic for Non-Food Application
Pharmaceutical and medical applications
Usage of Gum Arabic in pharmaceutical depends upon its emulsifying, suspending, demulcent or coating characteristics. It is an effective suspending aid and has been employed to suspend insoluble drugs and to prevent the precipitation of heavy metals from solution. Due to its high solubility, low viscosity and high soluble dietary fiber content. Gum Arabic finds use in meal replacers, nutritional beverages and weight –loss products. For pharmaceutical usage its inherent emulsifying and stabilizing properties plus its demulcent and emollient characteristics have led to a number of applications which are further extended because it retains its viscosity and stabilizing properties over a wide pH range. Intestinal absorption of poorly soluble medicinal substances, such as steroids, fat-soluble vitamins, and barbiturates which are suspended in Gum Arabic and be facilitated by incorporation of welting-agents or other emulsifiers into the preparation. In the medical area Gum Arabic has been used for the treatment at low blood pressure caused by hemorrhage or surgical shock. The addition of (a7%) Gum Arabic solution reduced the dissipation rate of the sodium chloride solution and this treatment was successfully. However, the subsequent development of such blood plasma extenders eliminated the sue of Gum Arabic. In plastic surgery Gum Arabic adhesive has been used successfully in grafting destroyed peripheral nerves. Spray dried Gum Arabic is sued both as a carrier in capsules and as a tabletting binder. One of its oldest and best known uses has been in cough syrups.

Cosmetic industries
Gum Arabic is effective as an emulsifier. It increases the viscosity and stabilizes the lotion, assists in imparting spreading
properties, adds a smooth feeling to skin and forms a protective coating. The Gum is also used as a foam stabilizer in liquid soaps, fixative and binder in hair creams as a stabilizer and film former in protective creams. One of the advantages of Gum Arabic in cosmetics is its non-toxicity. In Applications for creams, shampoo and hair cream. Gum Arabic stabilizes, adds a smooth feeling to the skin and forms a protective coating. It is also a binding agent in the formation of compact cake and rouges and an adhesive in the preparation of facial masks.

Textile Industries
Gum Arabic gives body in finishing silk and rayon fabric without loss of transparency. It is also used as a sizing and finishing agent in printing formulations for imparting designs or decoration to fabrics. Gum Arabic can be used in the melting yarn chips process. During melting chips Gum Arabic will be added in order to make the yarn stronger ant easy to break. More recently many textile manufacturers use modified starches mixed with Gum Arabic. Moreover Gum Arabic finds usage in finishing silk and reyon by giving body to the fabric without interfering with the transparency. Desirable effects can be created on cotton too.

Adhesive Industries
Powdered Gum Arabic is a simple adhesive for paper products and is commonly used by dissolving it in two to three times of its weight of water. Gum Arabic glues are easy to prepare, light in colour, odorless and very stable. In addition, the adhesive strength of the gum can be improved by the addition of certain metal salts such as calcium nitrate and aluminium sulfate. Gum Arabic makes a brittle film which is usually plasticized by the addition of 0-10% glycerol based on the weight of dry gum. A good transparent adhesive can be made with Gum Arabic. However, to reduce costs, smaller amounts of Gum Arabic can be used. In the preparation of laminated papers, Gum Arabic has found specialized application. The bonding of regenerated cellulose films can be accomplished by a special Gum Arabic paste.
Printing Ink and painting industries Gum Arabic is an important constituent of many special purpose inks. Water colour and quick drying inks utilize the suspending and binding properties of Gum Arabic. They can be added to the painting formula to fix the pigment by incorporation of protective colloids into a pigment-vehicle system. The incorporation of protective colloids into a pigment-vehicle system, such as paint, is an established art. This is usually done to obtain improved particle size during precipitation of the pigment to control pigment aggregates and welting qualities and to control consistency and setting in water-emulsion paints. The usage of Gum Arabic is limited owing to its unfavorable effects on the water resistance of the final paint film. Gum Arabic is a constituent of many special purpose inks because of its excellent protective colloid properties. The effective-ness of this protective colloid action of Gum Arabic is designed by its gold number. The gold number is defined as the number of milligrams of gum which when added to a standard gold dispersion is just sufficient to prevent a change in colour from red to blue when 1 ml. of 10% sodium chloride solution is added. In lithography Gum Arabic has found special application because of its easy wettability and spreadabilily, viscosity control, stabilization of lithography chemical and ready removability through simple washing acting as a so called sensitize.
